I am starting a new site in French. It is registered and hosted by Rapidomaine in France. However they don't do SPF spf.pobox.com records for you, and it is impossible to add a TXT record to your DNS with their interface. I thought I could host my DNS with Zoneedit (where you can write your own TXT record), and created a zone there. Zoneedit's interface asked me to change the domain's nameservers to zoneedit; when I did that on Rapidomaine, Rapidomaine warned me that if I do that, they will no longer be able to host my domain. And indeed, my domain was no longer accessible.

Does anyone know what I did wrong and if I can achieve what I wanted? huh

You need to check with rapiddomaine what you can and can't do before doing it.

If it's a virtual domain, with a non unique ip address, I think that they have to run the dns server. If it has a real IP address, unique, static, then you can use any dns server, just point it to the ip address of your site.

Thanks. It is a virtual domain, so I think what I wanted to achieve is not possible.

What do you mean by virtual domain? If you are talking about shared hosting for yourdomain.com then it is possible to host DNS with one and host it with another company.
